For the Love of Food.

I awoke this morning to my normal 'alarm clock'... 
my son, Jack, trying his darndest to jump out of bed himself.
I'm 35 weeks pregnant today!
Seriously looks like I'm about to *pop!*

So, after getting up, stretching my legs and letting our dog out I was off to make Jack and I some breakfast! I couldn't figure out what in the world I wanted so, I ended up making a smoothie.
It turned out to be the best dessert-for-breakfast smoothie I've ever made!
Look at it in all it's glory!

Dessert-For-Breakfast Smoothie
3 RIPE bananas
1 tbsp Peanut Butter
2 tbsp Ovaltine
1/3 cup 1% Milk
 4-5 Ice Cubes

This was seriously like the best milkshake I've ever had.

For lunch, I went with a big, beautiful salad!


With a lovely, hot glass of Irish Breakfast Tea!

I've discovered I enjoy tea even more when I use a glass mason jar. 
Something about seeing all the goodness that's brewing is really appealing.

Remember, we eat with our EYES not just our stomachs!

Since, I am pregnant, I needed some snacks along the way today, so, after l made a mini chicken salad sandwich with Spring Mix! 
Such a cute wittle sammich...

 I also have to share the awesome Chicken Tacos my husband, Danny, and I made last night!


I love that he is open and willing to eating all the veggies I can throw together.
Also, anything that is remotely Mexican food, he loves... So, I can't go wrong with tacos!
Well, that's all for today! I'm too exhausted to accomplish much more than this.

What my husband eats. [A wonderful food-day]

I'm not sure of the eating habits of your husband, wife, or significant other but, with my husband, he'll eat just about anything I put in front of him... Whether it be something he recognizes or if it's some off hand experiment I've concocted. 

Since he works five days a week, getting up at 4:45am, his lunch isn't his biggest concern [coffee and leaving the house on time, fully clothed and clean is].
Since he usually takes a sliced chicken sandwich and a side of crackers or chips, I decided to switch it up a bit for him this time.
Today, I made him a b-e-a-utiful salad to take with him in the morning.
And... here it is!


It's so simple, delicious and healthy.
I would make these every day for him if he would eat them on the regular.


Tonight, we're keeping with the healthy but, cheesy theme and I made a big ol'pot of Creamy & Cheesy Veggie Soup.
Potatoes, Broccoli, Carrots, Celery, Onions so far!

Mixed in Cream of Mushroom, Corn and Multiple Cheeses! Mmmm!

Cheeeeeeeeeeeeeeese. 

Since we don't skip dessert,
I have made...
BANANA NUT MUFFINS!!!
You can smell the awesomeness, can't you?
These lovely little muffins will also serve as breakfast tomorrow!

So, all-in-all, I've had a wonderful food-day [Is that a thing? It is now.]

Rambling Sushi.


It seems that I had begun to overanalyze the whole 'I'm a blogger now. I blog things.' mentality.
I found myself trying to come up with an uber intriguing, well thought out, super-duper blog post 
BUT,
 then it occurred to me that I don't need to outline and plan out everything I'm going to post because that's just a waste of energy when I could just be speaking, or rambling, from the heart [like I'm currently doing]. 



SO, keeping with the RANDOMNESS that is ME... Here's what I'm currently munching on:

Pan-Seared Salmon, Spinach & Carrot SUSHI with Sriracha Soy Sauce!

Pan-Seared Salmon, Spinach & Carrot Sushi.
Fresh or Frozen Salmon Filet.
Fresh Organic Spinach.
Fresh Organic Carrots [julienned]
1/4 cup Long Grain Rice [it's what I had]
Salt & Pepper
Tbsp. Olive Oil

CONDIMENTS!
Soy Sauce
Sriracha

Super easy recipe! GO!
If using a frozen Salmon Filet... thaw that thang.
Cook rice according to package. 
[I admit, I didn't go legit on the sushi rice. It doesn't matter when you're really hungry]
While rice is cooking, slice your carrots!
Set pan with Olive Oil to HIGH heat.
With paper towels, pat dry your Salmon filet then season with Salt & Pepper.
When ready, put your Salmon SKIN DOWN in the pan.
Cook Salmon about 3 minutes.
FLIP.
Cook another 3-4 minutes on other side.
When Salmon is done, set aside.
When rice is cooked, pour onto plate and let it cool a bit [enhances the stickiness].
When everything is ready...
ASSEMBLE SUSHI!
EAT ALL THE THINGS!

This is one of the best reasons I have found to not do an exclusively raw food lifestyle change. I couldn't have the sushi I so long for. I don't want to sub out delicious, warm, cooked rice for two days of soaking raw rice for the exact, if not extremely near the same outcome [minus the warmth]. I celebrate my differences from others... in this case, the only reason I would ever soak rice instead of cooking it were if I was stranded in a monsooning jungle where that's all I had and I couldn't manage a fire because I was constantly walking to get out of the jungle. In that case, give me some banana leaves, catch some water and survive until my rice is moist.

I'm sorry I said 'moist'.

A Few New Beginnings.

Seeing that it is a NEW YEAR and all... I figured it would be a WONDERFUL IDEA to create, organize, and try to keep up with, a BLOG while being 34 weeks pregnant!

What could possibly go wrong? Am I right?!? 


Recently, I have been collecting as much information as I can for a better, healthier and happier way of living.
Not the generic, 'I'm going to eat better this year!' resolution, but more in the 'We're going to have a beautiful little boy joining us in the world and I want, not only myself, but my wonderful new family to feel as best as we possibly can.' lifestyle change. 


Not only do I know we will feel better physically but, also I'm looking forward to the emotional and mental benefits, as well.

I honestly, haven't the slightest clue as to what I will be posting here over the next few months.
